About Hummus

Hummus is a Levantine dip or spread made from cooked, mashed chickpeas or other beans, blended with tahini, olive oil, lemon juice, salt and garlice. It is popular in the Middle East and Mediterranean, as well as in Middle Eastern cuisine around the globe. It can also be found in most grocery stores in North America and Europe.

Origin

There is insufficient evidence to determine the precise location or time of the invention of hummus. Though chickpeas were widely eaten in the Middle East, and they were often cooked in stews and other hot dishes, puréed chickpeas eaten cold with tahini do not appear before the Abbasid periof in Egypt and the Levant.
